Almond Pastries
Almond pastries are typical Sicilian patisserie made with almonds flours and sugar, perfect to end a lunch or a dinner.
Ingredients: 250 gr whole peeled almonds, 250 gr sugar, 2 egg whites, Almond flavoring, half a teaspoon.
To garnish: Candied cherries and Whole almonds just enough
Preparation:
1- Put the peeled almonds and sugar in a mixer equipped with steel blades and blend until they are powdered.
2- Add the egg whites and the almond aroma and blend again to mix everything.
3- The dough will be ready when it is compact but soft to the touch.
4- Transfer the dough into a very resistant sac-à-poche with a striped bottle.
5- Line a dripping pan with baking paper and form small piles with a diameter of 3 cm and about 2 cm high.
6- Garnish with the candied cherries cut in half and part with the whole almonds.
7- At this point, put the dripping pan in the refrigerator and let the almond pastes cool for at least 7 hours.
- Bake in a preheated convection oven at 180º for 15 minutes.
- Once out of the oven, let it cool and serve your almond pastries.
